Crispy Coconut Chicken and Hawaiian Rice

This is what we had for dinner last night- it's a favorite over here.

Crispy Coconut Chicken (our best bites)

Hawaiian Rice (when I serve this with the coconut chicken, I just leave out the chicken)

3/4 cup cooked, diced chicken
2 cups cooked, COLD rice
2 green onions, diced
1/4 cup carrot, finely diced
1/4 cup pineapple, diced
1 egg (NOT beaten, just crack it into the pan)
2 T soy sauce
1 tsp sesame oil
2 T vegetable oil
pepper

Heat vegetable oil in skillet or wok. Add chicken, rice, onions, carrots, soy sauce, sesame oil and stir fry til hot Add egg (again, it works better if you just crack it into the pan), stir while cooking. Add pepper to taste. Add pineapple and serve with soy sauce.
