Honey Lime Enchiladas
I made these for dinner tonight- we love this recipe. We also took some to our neighbors... I hope they enjoyed it too! We actually both ate well at dinner tonight, which is probably a first for us for the last few days- we've had the stomach flu here and not felt much like eating. I still can't handle sweet things, which is why there is a box of brownies from my mom sitting next to me and I just can't eat one yet. :) :(. On the plus side, I did lose 3 or 4 pounds from this whole ordeal! Wahoo! It got me past the plateau and excited about exercising and losing the last couple pounds I wanted to get off from Ethan's baby-weight! I got this recipe from Mel's Kitchen Cafe... love that site!

Sick Children... but Cute Children
I haven't posted for a while. I blame sickness- I feel like we had a week of good health and then we got sick again. However this time it wasn't the cold-type. Audrey got her first ever stomach bug that made her throw up. She spit up as a baby, and she got carsick once, but this is the first EVER sickness that has made her throw up. I really really really REALLY don't like throw-up. REALLY. Really. Really. Don't. At all. Anyway, so I got to kind of overcome this a little. Audrey kept saying her tummy hurt all day yesterday but she wasn't pooping or puking anything weirdly-like, until about 5. Ethan got it about 5am this morning. So far Ethan has had a little rougher time of it. Poor baby. But he did fall asleep on me in church yesterday.
I made these pancakes again for breakfast this morning. Audrey ate one and a half, which was great. Ethan ate a half, but it didn't stay down. Thomas and I LOVED them with whipped cream on top. Like, better than syrup. If you read this blog, then you know I have a syrup *thing*. This was way better! And WAY better. Oh. Go make some. Now. *sigh*
I also made these again... I seriously love this roll recipe. It is so lovely. And easy. I find the stickier the dough before you roll it out, the softer the roll. I also learned that if I spray the counter and my hands with non-stick spray, then sprinkle flour on the surface it doesn't stick so bad. Also sprinkling a little flour- not too much, or it can make your dough tougher- on top of the dough halves as you spread them into a circle helps a lot too.
Audrey is so cute. We had to watch Finding Nemo twice today- the second time she pulled it out I was like, "No, we already saw that one today" and she puts on her fake cry and hugs it to her and says "Please, Mommy- it's so beautiful" with fake cries in the word b-eau-ti-ful. I couldn't resist!

Sweet and Sour Chicken
I made this for dinner tonight. Please, please make this. It is divine. I can't express how much better it is than anything Panda Express- but it's a lot like their Orange Chicken. You could even add a little orange extract to the sauce to make it even more like it. The first time I made it, I couldn't believe such deliciousness came from my kitchen. PS- my mother (Ellen) is in the hospital. She has been battling a C Diff (I don't know how to spell/pronounce the real name) infection and has been through three rounds of antibiotics and finally went to the ER yesterday because she just couldn't keep anything in her. She is doing better- they are giving her saline to rehydrate her and got an IV of antibiotics in her, as well as some great pain meds and anti-nausea meds. My other mom, Rebecca, is staying with her. She is at Banner Baywood in room 531 if you are in the Mesa area and would like to drop in and visit.

Honey Whole Wheat Pancakes (or waffles!)
I made these for breakfast last week. And then I made them again, this week for breakfast, only I made waffles out of them. They were AWESOME. I really love this recipe- it's pretty good for you, as far as pancakes or waffles go. I actually felt good about feeding this to my family. Thomas topped his with yogurt and he said it was really really good. I had a teensy bit of syrup... I really really love syrup. It's a weakness. But I felt better about putting syrup on these rather than my stand-by waffle recipe. only 2 T sugar? and whole wheat flour? :) A note on the waffle-adaptation, they cooked significantly faster than my standard waffles usually do in my waffle iron. The batter is also thicker, so I had to use a little more than I usually do to fill up the waffles. They were great though.
I have no idea where I found this recipe. I did some poking around on a few websites I thought I had gotten it from but I haven't been able to find it. If you recognize it please let me know and I will add a link!

2 T sugar
1/8 tsp nutmeg
1/4 tsp ginger (I didn't have this, it was fine)
3/4 tsp cinnamon*
1/4 cup melted butter
2 T honey
1 egg
2 cups regular milk
1 cup berries
1 tsp vanilla
Mix dry, then add rest. Top with whipped cream, syrup, yogurt, fresh fruit, or whatever.
*you can leave the spices out and just have plain honey whole wheat pancakes.

Black Bean Soup... again
Oh my goodness! I made this again last night... and it was SO amazing. I liked it the first time, but this time it was absolutely wonderful. WOW. PLEASE go make it. I only use 1/2 tsp salt because she calls for kosher salt and all I have is table salt. I love it with a sprinkling of cheese and tortilla chips. But you could do lime wedges, sour cream, cilantro, fresh bread and butter, whatever. It is SO good. Even my Audrey loved it- she had three bowls with tortilla chips and she loved it. MAKE IT!
