I really love this recipe- it's pretty good for you, as far as pancakes or waffles go. I actually felt good about feeding this to my family. Thomas topped his with yogurt and he said it was really really good. We love it with Reddi-wip and ...I really really love syrup. I think it's a moist-ness issue- I hate my pancakes to be dry-feeling. It's a weakness. But I felt better about putting syrup on these rather than my stand-by waffle recipe. only 2 T sugar? and whole wheat flour? :) I've used this pancake recipe for waffles too and it works out fine.
As a side note, an amazingly awesome homemade buttermilk syrup recipe (ok, it's basically like caramel sauce for breakfast) is found here from Our Best Bites. Total win.
I have no idea where I found this recipe. I did some poking around on a few websites I thought I had gotten it from but I haven't been able to find it. If you recognize it please let me know and I will add a link!
Honey Wheat Pancakes
2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 T sugar
1/8 tsp nutmeg
3/4 tsp cinnamon
1/4 cup melted butter
2 T honey
1 egg
2 cups buttermilk or regular milk (I used sour milk)
1 cup blueberries, fresh or frozen (you can use any berry, or you can leave them out- delish either way)
Mix dry, then add rest. Top with whipped cream, syrup, yogurt, fresh fruit, or whatever.
